Quick Fish Tacos

OK, I usually take great pride in my Mexican cooking, but tonight the girls wanted fish sticks, so I was looking for something I could have that was quick and easy and , well, made with fish sticks. I knew I had corn tortillas, but the rest would have to be made from what was lurking in the bowels of my fridge…

Fish taco sauce. Every good fish taco needs that creamy sauce, but what did I have? Well, I know the primary ingredient is usually mayo, which I did have. I want creamy and a little spicy, how about hot sauce? Presto.

No cabbage, but my kids like these shredded carrots that come in bags, and the texture and crunch they add really sealed the deal.

These tacos are a great quick and easy meal when you don’t have a lot of time but are in the mood for Mexican(or when the kids want fish sticks). Add some chips, salsa, beans and rice to make a complete dinner.

Ingredients

  1. 16-20 Gorton’s Fish Sticks
  2. 1c Mayonaise
  3. 1c La Victoria Green Taco Sauce
  4. dash hot sauce (tabasco, etc.)
  5. 1c Shredded Carrots
  6. 16-20 Corn Tortillas

Directions

  1. Pre heat oven and cook fish sticks according to package directions.
  2. Combine mayo, hot sauce and taco sauce in a small bowl, mix with whisk to a creamy texture.
  3. Warm tortillas in microwave until soft, about 2 miinutes.
  4. Place 1 or 2 fish sticks in 1 or 2 tortillas, top with mayo sauce and shredded carrot. Serve immediately.

And the winner is…

With the announcements of the Oscar nominees this morning, I thought I had better get out my Album of the Year pick, so here goes.

Mars Volta. 

Yeah, this one wasn’t really even close. All of the albums nominated were good, to be sure, but the Volta record was just a home run. It had everything: Hard rockin’ moments, subtle textures, excellent musicianship, interesting (if bizarre) lyrics, the list goes on. I liked this recording the first moment I heard it, and it has continued to get better and better with time.  This was one of those albums where I didn’t even make it past the first three or four tracks for a few weeks, just because I kept going back to hear them over again.  That is always a good sign. In my opinion, this is among the greatest albums released in a long time, and one I think I will be pleased to hear come up on my iTunes mix again and again in the years to come.

My Albums of the Year 2008

I choose an album of the year every year, but this will be the first really online. My list of AOY’s goes all the way back to 1983, believe it or not. Anyway, here are my favorites for the year past; I will post my personal winner in a few weeks. Let me tell you I have a solid favorite here, but these are all good.
